Besides juices and pulps, Saborama has just launched Freeze Dried Açaí into the market. This product is increasingly being demanded in several countries. Since heat isn´t applied, the process of lyophilization also known as Freeze Dried wholly extracts water from the pulp keeping all its nutritional qualities. Held in its original packaging, kept at a medium temperature, in a clean aired dry place, it offers a shelf life of over 18 months. It also should be kept out of sunlight.
Freeze Dried avoids importing huge quantities of water. You only get dry matter. You don´t need frozen facilities for its storage. It can be easily exported by plane thus gaining delivery time.
It offers the exact same applications as pulp does, such as juices, smoothies, shakes, amongst other products, but it also can be marketed as a supplement or in capsules. Our fruits´selection begins the very first moment in which Euterpe Precatoria palm trees should be collected, giving priority to ripest Açaí berries thus offering a higher antocyanin concentration.
A research recently performed by Dr. Stephen Talcott and other colleagues, from Texas A&M University, has shown that Euterpe Precatoria offers higher nutritional contents and a superior amount of antocyanines than its Oleracea counterpart, which grows in eastern Amazonas. Its ORAC values exceed 75,000 Trolox every 100 grams of powder. On the other hand, its antioxidants resist much better heat applied during pasteurization.
Thus, any Euterpe Precatoria product will offer a neat superior amount of antocianines.
Freeze Dried Açaí Powder
The freeze drying process retains all the nutritional properties of Açaí through reducing the pulp into a fine powder at very low temperatures. Unlike extracts, freeze dried Açaí completely captures the unique synergy of nutritional benefits found in Açaí and it is completely pure with neither carrying agents nor additives. Saborama performs its lyophilization, or freeze drying process, in one of Latin America´s most modern facilities. Its modern technology offers a product with a humidity lower than 2 per cent. This factory offers a GMP certification and it´s close to obtain its HACCP.

Difference between freeze dried Powder and Extracts
Extracts are normally made from spray dried acai powder and are often found in Açaí capsules. Spray drying is performed at very high temperatures and through this method Açaí tends to loose over 40% of its nutritional qualities. In addition they require large amounts of carrying agents (40-50%) such as starch or maltodextrin to help aid its shelf life. Many of those products offer less than 25% of pure Açaí. Dr. Stephen Talcott explains that one gram of Precatoria pulp offers 108 ORAC, thus 7 grams offer 756. Since powder multiplies by 7 due to its concentration, 100 grams will offer 75,600 ORAC, which is over 50% what Oleracea has to offer. On top, it resists heat much better.
Packaging: 20 kg. Boxes Our Freeze Dried Açaí is packed in 10 kg. 120 micron triple coated bags. Two bags are packed inside a thickened pilable cardboard box. This ensures its shelf life over 18 months and it resists any manipulation during freight. One ton of this powder has a volume of 6 cubic meters or 162 cubic feet approximately.
